Ingredients
- 2 cans of tuna, drained
- 1 cup of French green lentils
- 1 red onion, thinly sliced
- 2 cups of cherry tomatoes, halved
- 1 cup of black olives, pitted
- 4 hard-boiled eggs, quartered
- 1 cup of green beans, blanched
- 1/4 cup of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper, to taste
Instructions

Cook the lentils according to package instructions. Drain and set aside.

In a large mixing bowl, combine the tuna, red onion, cherry tomatoes, olives, hard-boiled eggs, and green beans.

In a separate small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper to make the dressing.

Pour the dressing over the tuna mixture and toss gently to combine.

Add the cooked lentils to the salad and gently toss again.
