How To Make Warm Salad of Chargrilled Courgettes & Salmon

Ingredients
- 4 courgettes, sliced lengthways
- 4 salmon fillets
- 2 tbsp olive oil
- 2 cloves of garlic, minced
- Juice of 1 lemon
- Salt and pepper, to taste
- 100g cherry tomatoes, halved
- 50g feta cheese, crumbled
- Fresh basil leaves, for garnish
Instructions

Preheat a grill or griddle pan.

Brush the courgette slices and salmon fillets with olive oil and season with salt and pepper.

Grill the courgette slices for 2-3 minutes on each side until they have grill marks.

Grill the salmon fillets for 4-5 minutes on each side until cooked through.

In a large bowl, whisk together the minced garlic, lemon juice, olive oil, salt, and pepper.

Add the grilled courgettes, cherry tomatoes, and feta cheese to the bowl and toss to combine.

Flake the salmon into large chunks and gently fold into the salad.

Serve the warm salad on a platter, garnished with fresh basil leaves.
