Ingredients
- 4 mackerel fillets
- 4 medium beetroots, roasted and sliced
- 1 red onion, thinly sliced
- 4 cups mixed salad greens
- 1/4 cup chopped fresh dill
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the mackerel fillets on a baking sheet lined with parchment paper. Season with salt and pepper.

Roast the mackerel in the preheated oven for 15-20 minutes, or until cooked through.

In a large bowl, combine the roasted beetroot, red onion, mixed salad greens, and chopped dill.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

Pour the dressing over the salad and toss to combine.

Divide the salad onto plates and top each portion with a roasted mackerel fillet.
