How To Make Thai Salmon Noodles

Ingredients
- 4 salmon fillets
- 8 oz rice noodles
- 2 tbsp vegetable oil
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1/2 cup snap peas, trimmed
- 1/4 cup soy sauce
- 2 tbsp fish sauce
- 2 tbsp brown sugar
- 2 tbsp lime juice
- 1 tbsp Sriracha sauce
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

Cook the rice noodles according to package instructions. Drain and set aside.

In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.

Add the sliced bell pepper, julienned carrot, and snap peas to the skillet. Cook for 3-4 minutes until the vegetables are slightly tender.

Push the vegetables to one side of the skillet and add the salmon fillets, skin side down. Cook for 3-4 minutes until the skin is crispy and the salmon is cooked through. Flip the salmon and cook for an additional 2 minutes.

In a small bowl, combine soy sauce, fish sauce, brown sugar, lime juice, and Sriracha sauce. Pour the sauce over the salmon and vegetables in the skillet. Toss to coat evenly.

Add the cooked rice noodles to the skillet and toss with the salmon and vegetables until everything is well combined and heated through.

Serve the Thai salmon noodles garnished with fresh cilantro and lime wedges.
