How To Make Superhealthy Salmon Salad

Ingredients
- 4 salmon fillets
- 2 tbsp olive oil
- 2 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 avocado, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup roasted almonds, chopped
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper and drizzle with 1 tbsp of olive oil. Season with salt and pepper. Bake for 12-15 minutes, or until the salmon is cooked through.

In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, avocado, red onion, and roasted almonds.

In a small bowl, whisk together the lemon juice, remaining olive oil, salt, and pepper.

Once the salmon is cooked, let it cool for a few minutes before flaking it into bite-sized pieces.

Add the flaked salmon to the salad bowl and drizzle with the lemon dressing. Toss gently to combine.
