Ingredients
- 4 haddock fillets
- 2 tbsp olive oil
- 2 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup couscous
- 1 1/2 cups vegetable broth
- 1 orange, zest and juice
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, combine the paprika, cumin, garlic powder, onion powder, salt, and black pepper to create the spice rub.

Pat the haddock fillets dry and rub them with the spice mixture on both sides.

Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Cook the fillets for 3-4 minutes on each side, until golden brown. Transfer the fillets to a baking dish and bake in the preheated oven for 10-12 minutes, or until cooked through.

In the meantime, prepare the couscous. In a medium saucepan, bring the vegetable broth to a boil. Stir in the couscous, cover the pan, and remove it from the heat. Let it sit for 5 minutes, then fluff with a fork.

In a separate bowl, combine the orange zest, orange juice, chopped parsley, and 1 tbsp olive oil. Season with salt and pepper.

Add the orange and parsley mixture to the cooked couscous and toss to combine.

Serve the spice-rubbed haddock fillets on a bed of orange and parsley couscous.
