How To Make Smoky Paprika Seafood Rice

Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 tsp smoked paprika
- 1 cup white rice
- 2 cups vegetable broth
- 1 lb mixed seafood (such as shrimp, squid, and mussels)
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened.

Add the diced red bell pepper and smoked paprika to the pan. Cook for another 2 minutes.

Stir in the white rice and cook for 1 minute, ensuring all the grains are coated with the flavorful mixture.

Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover the pan, and simmer for 15 minutes or until the rice is cooked and the liquid is absorbed.

While the rice is cooking, season the mixed seafood with salt and pepper.

In a separate pan, heat a tablespoon of olive oil over medium heat. Cook the mixed seafood until cooked through, about 5-7 minutes.

Once the rice is cooked, fluff it up with a fork. Gently fold the cooked seafood into the rice.

Serve the smoky paprika seafood rice hot, garnished with fresh parsley.
