Serves:
Ingredients
- 4 hake fillets
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 1 red onion, thinly sliced
- 2 cloves of garlic, minced
- 1 can of cannellini beans, drained and rinsed
- 4 cups of baby spinach
- Juice of 1 lemon
- Fresh parsley, for garnish
Instructions
-
Preheat the oven to 400°F (200°C). Place the hake fillets on a baking sheet.
-
In a small bowl, mix together the smoked paprika, garlic powder, salt, and black pepper. Sprinkle the spice mixture evenly over the hake fillets.
-
Drizzle the olive oil over the fillets and massage the spices into the fish. Bake in the preheated oven for 15-20 minutes, or until the hake is cooked through and flakes easily with a fork.
-
While the hake is baking, heat a skillet over medium heat. Add the red onion and garlic and sauté until the onion is soft and translucent.
-
Add the cannellini beans and cook for another 5 minutes, until heated through. Stir in the baby spinach and cook until wilted.
-
Remove the cooked hake from the oven and squeeze lemon juice over the top. Serve the hake on a bed of the bean and spinach mixture. Garnish with fresh parsley.
