Ingredients
- 1 lb shrimp, peeled and deveined
- 2 cups diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- Salt and pepper to taste
- Tortilla chips, for serving
Instructions

In a large bowl, combine the shrimp, diced tomatoes, red onion, cilantro, jalapeno pepper, lime juice, and olive oil. Mix well.

Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.

Remove the shrimp from the skillet and let them cool for a few minutes.

Once cooled, chop the shrimp into small pieces and add them back to the salsa mixture. Stir to combine.

Season with salt and pepper to taste.
