- 4 sea bass fillets
- 1 cup wild garlic leaves
- 1 cup mayonnaise
- 2 tablespoons lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste

Preheat the oven to 400°F (200°C).

In a blender, combine the wild garlic leaves, mayonnaise, lemon juice, olive oil, salt, and pepper. Blend until smooth.

Season the sea bass fillets with salt and pepper on both sides.

Heat a large skillet over medium-high heat and add some olive oil. Place the fillets skin side down and cook for 3-4 minutes until the skin is crispy.

Transfer the sea bass fillets to a baking dish and spoon the wild garlic mayonnaise over the top.

Bake in the preheated oven for 10-12 minutes, or until the fish flakes easily with a fork.
