How To Make Scampi Po’ Boys

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil, for frying
  • 4 French bread rolls
  • 1/2 cup remoulade sauce
  • 1 cup shredded lettuce
  • 4 slices tomato
  • 4 slices dill pickles

Instructions

  1. In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

  2. Heat about 1 inch of vegetable oil in a large skillet over medium heat.

  3. Coat the shrimp in the flour mixture, shaking off any excess.

  4. Fry the shrimp in the hot oil until golden brown and crispy, about 2-3 minutes per side. Remove from the skillet and drain on a paper towel-lined plate.

  5. Slice the French bread rolls in half lengthwise and spread the remoulade sauce on both sides.

  6. Layer the bottom half of the rolls with shredded lettuce, tomato slices, pickles, and the fried shrimp.

  7. Place the top halves of the rolls on top and press down gently to secure the sandwich.

  8. Serve the Scampi Po’ Boys immediately.
