How To Make Sausage & Prawn Jambalaya

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 bell peppers, diced
- 4 sausages, sliced
- 1 cup prawns, peeled and deveined
- 2 cups long-grain rice
- 1 can diced tomatoes
- 2 cups chicken broth
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Chopped parsley, for garnish
Instructions

Heat olive oil in a large pan over medium heat. Add the onion and garlic, and sauté until translucent.

Add the bell peppers, sausages, and prawns to the pan. Cook until the sausages are browned and the prawns are cooked through.

Stir in the rice, diced tomatoes, chicken broth, paprika, thyme, oregano, and cayenne pepper. Season with salt and pepper.

Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.

Remove from heat and let it sit for 5 minutes before fluffing with a fork. Garnish with chopped parsley before serving.
