Ingredients
- 4 salmon fillets
- 2 tablespoons olive oil
- Salt and black pepper to taste
- 1 cup fresh parsley leaves
- 1/4 cup fresh basil leaves
- 2 tablespoons capers
- 2 cloves garlic, minced
- 1 tablespoon Dijon mustard
- Juice of 1 lemon
- Extra lemon wedges, for serving
Instructions

Preheat grill or grill pan to medium-high heat.

Rub salmon fillets with olive oil and season with salt and black pepper.

In a food processor, combine parsley, basil, capers, garlic, mustard, lemon juice, and a pinch of salt and black pepper. Pulse until well combined.

Grill salmon fillets for about 4-5 minutes per side, or until cooked to desired doneness.

Serve salmon topped with salsa verde and extra lemon wedges on the side.
