How To Make Salmon with New Potato & Watercress Salad

Ingredients
- 4 salmon fillets
- 1.5 lbs new potatoes, halved
- 2 bunches of watercress
- 1/4 cup olive oil
- 1 lemon, juiced
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Place the salmon fillets on a baking sheet and season with salt and pepper. Bake for 15-20 minutes, or until cooked through.

Meanwhile, boil the new potatoes in salted water until tender. Drain and set aside.

In a large bowl, combine the cooked new potatoes, watercress, olive oil, lemon juice, salt, and pepper. Toss gently to combine.

Serve the salmon fillets on top of the potato and watercress salad. Enjoy!
