Ingredients
- 250g salmon fillets, cooked and flaked
- 250g smoked haddock fillets, cooked and flaked
- 400g boiled potatoes, mashed
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 2 tablespoons lemon juice
- 2 eggs, beaten
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 2 tablespoons vegetable oil
Instructions

In a large bowl, combine the salmon, smoked haddock, mashed potatoes, onion, garlic, parsley, dill, lemon juice, eggs, salt, and pepper.

Shape the mixture into patties and coat them with breadcrumbs.

Heat the vegetable oil in a frying pan over medium heat. Cook the fish cakes for 4-5 minutes on each side until golden brown.

Serve hot with a side salad or tartar sauce.
