How To Make Roast Pepper & Salmon Platter

Ingredients
- 4 salmon fillets
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 1 red onion, sliced
- 4 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 lemon, sliced
- Fresh dill, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large baking dish, arrange the sliced bell peppers, red onion, and minced garlic.

Drizzle the olive oil over the vegetables and season with salt, black pepper, and paprika. Toss everything together to coat.

Place the salmon fillets on top of the vegetables and season them with salt and black pepper.

Lay the lemon slices on top of the salmon.

Roast in the preheated oven for 20-25 minutes or until the salmon is cooked through and flakes easily with a fork.

Remove from the oven and garnish with fresh dill.

Serve the roast pepper and salmon platter hot.
