Ingredients
- 4 mackerel fillets
- 2 beets, cooked and sliced
- 1 cup cooked spelt
- 1 cup arugula
- 1/4 cup sliced red onion
- 1/4 cup chopped fresh parsley
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

Season the mackerel fillets with salt and pepper, then roast them in the oven for about 15 minutes or until cooked through.

In a large bowl, combine the beets, spelt, arugula, red onion, parsley, olive oil, lemon juice, salt, and pepper. Toss to combine.

Divide the salad among four plates and top each with a roasted mackerel fillet.
