Ingredients

  • 4 mackerel fillets
  • 2 beets, cooked and sliced
  • 1 cup cooked spelt
  • 1 cup arugula
  • 1/4 cup sliced red onion
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the mackerel fillets with salt and pepper, then roast them in the oven for about 15 minutes or until cooked through.

  3. In a large bowl, combine the beets, spelt, arugula, red onion, parsley, olive oil, lemon juice, salt, and pepper. Toss to combine.

  4. Divide the salad among four plates and top each with a roasted mackerel fillet.

  5. Serve and enjoy!
