Ingredients
- 1 pound prawns, peeled and deveined
- 4 cups mixed salad greens
- 1 cucumber, sliced
- 1 bell pepper, diced
- 1 avocado, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup cherry tomatoes, halved
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Bring a pot of water to a boil. Add the prawns and cook for 3-4 minutes until they are pink and cooked through. Drain and set aside.

In a large bowl, combine the mixed salad greens, cucumber, bell pepper, avocado, red onion, cherry tomatoes, and cilantro.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad and toss to combine.

Divide the salad into four plates or bowls. Top each portion with cooked prawns.
