How To Make Prawn Laksa Noodle Soup

Ingredients
- 200g rice noodles
- 300g prawns, peeled and deveined
- 1 tbsp vegetable oil
- 2 cloves of garlic, minced
- 1 red chili, sliced
- 2 tbsp laksa paste
- 400ml coconut milk
- 500ml chicken or vegetable broth
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tsp sugar
- 100g bean sprouts
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

Cook rice noodles according to package instructions. Set aside.

Heat vegetable oil in a large pot over medium heat. Add garlic and chili, and sauté for 1 minute.

Add laksa paste and cook for another 2 minutes until fragrant.

Pour in coconut milk and broth, and bring to a simmer.

Add prawns and cook until they turn pink and opaque, about 3-4 minutes.

Stir in fish sauce, soy sauce, and sugar. Adjust seasoning to taste.

Divide cooked noodles among 4 bowls. Ladle the soup and prawns over the noodles.

Top with bean sprouts and garnish with fresh cilantro.

Serve hot with lime wedges on the side.
