How To Make Prawn & Sweetcorn Fritters

Ingredients
- 200g prawns, peeled and deveined
- 1 cup sweetcorn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp paprika
- 2 green onions, chopped
- 1/4 cup milk
- 1 egg, beaten
- Oil for frying
Instructions

In a bowl, mix together the flour, cornmeal, baking powder, salt, black pepper, and paprika.

Add the prawns, sweetcorn, and green onions to the dry mixture and toss to coat evenly.

In a separate bowl, whisk together the milk and egg.

Pour the wet mixture over the prawn and sweetcorn mixture, and stir until well combined.

Heat oil in a frying pan over medium heat.

Drop spoonfuls of the fritter mixture into the hot oil and flatten slightly with the back of a spoon.

Fry until golden brown on both sides, about 3-4 minutes per side.

Remove from the pan and drain on a paper towel.

Serve hot with a dipping sauce of your choice.
