Ingredients
- 250g prawns, peeled and deveined
- 250g salmon fillets, skin removed
- 1/4 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1/4 cup diced red onion
- 2 cloves garlic, minced
- 1 tsp lemon zest
- 1/2 tsp paprika
- Salt and pepper, to taste
- 4 hamburger buns
- Lettuce and tomato, for serving
- Spicy Mayo:
- 1/4 cup mayonnaise
- 1 tsp sriracha sauce
- 1/2 tsp lime juice
Instructions

In a food processor, pulse the prawns and salmon until minced.

In a mixing bowl, combine the minced seafood with breadcrumbs, parsley, red onion, garlic, lemon zest, paprika, salt, and pepper.

Shape the mixture into patties and refrigerate for 10 minutes.

Preheat a grill or non-stick pan over medium heat. Cook the patties for 4-5 minutes per side, until cooked through.

Toast the hamburger buns.

In a small bowl, mix together the mayonnaise, sriracha sauce, and lime juice to make the spicy mayo.

Assemble the burgers with lettuce, tomato, a patty, and a dollop of spicy mayo.
