How To Make Prawn & Pomelo Salad

Ingredients
- 250g prawns, peeled and deveined
- 1 pomelo, peeled and segmented
- 1 cucumber, sliced
- 1 red chili, sliced
- 1 small red onion, thinly sliced
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh mint leaves
- 2 tbsp roasted peanuts, roughly chopped
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 1 tbsp honey
- Salt, to taste
- Pepper, to taste
Instructions

In a pot of boiling water, cook the prawns for 2-3 minutes until they turn pink. Drain and set aside.

In a large bowl, combine the pomelo segments, cucumber slices, red chili, red onion, cilantro leaves, and mint leaves.

In a small bowl, whisk together the fish sauce, lime juice, honey, salt, and pepper.

Add the prawns to the salad bowl and drizzle with the dressing.

Toss gently to combine all the ingredients.

Sprinkle the chopped peanuts on top before serving.
