How To Make Prawn & Chorizo Quesadilla

Ingredients
- 8 large flour tortillas
- 1 cup cooked prawns, chopped
- 1 cup chorizo, diced
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tbsp olive oil
Instructions

Heat a skillet over medium heat and add olive oil. Cook the chorizo until crispy, then remove from the skillet and set aside.

Place a tortilla in the skillet and sprinkle half of the shredded cheese on one half of the tortilla.

Top with half of the prawns, chorizo, red onion, and cilantro. Fold the other half of the tortilla over the filling.

Cook for 2-3 minutes, until the cheese starts to melt and the tortilla is golden brown.

Flip the quesadilla and cook for another 2-3 minutes, until the cheese is fully melted and the tortilla is crispy.

Remove from the skillet and repeat with the remaining tortillas and filling ingredients.

Cut the quesadillas into wedges and serve hot.
