- 4 white fish fillets
- 1 cup of polenta
- Zest of 1 orange
- Salt and pepper, to taste
- Olive oil, for frying
Instructions

Season the white fish fillets with salt and pepper on both sides.

In a shallow dish, mix together the polenta and orange zest.

Press each fish fillet into the polenta mixture, coating both sides evenly.

Heat olive oil in a frying pan over medium-high heat.

Cook the fish fillets for about 4-5 minutes on each side, until golden brown and cooked through.

Remove from heat and transfer to a plate lined with paper towels to drain excess oil.
