How To Make Pan-Fried Mackerel with Orange Salsa

- 4 mackerel fillets
- 2 oranges, segmented
- 1 red onion, finely chopped
- 1 jalapeno, deseeded and finely chopped
- 1 tablespoon of fresh cilantro, chopped
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions

Season the mackerel fillets with salt and pepper on both sides.

Heat the olive oil in a pan over medium heat.

Add the mackerel fillets to the pan and cook for 4-5 minutes on each side until golden brown and cooked through.

In a bowl, combine the orange segments, red onion, jalapeno, and cilantro. Season with salt and pepper.
