- 1 lb white fish fillets, cut into chunks
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch piece of ginger, grated
- 1 can (14 oz) coconut milk
- 1 can (14 oz) diced tomatoes
- 2 tablespoons curry powder
- 1 teaspoon turmeric powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 tablespoon vegetable oil
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat the vegetable oil in a large pot over medium heat.

Add the chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.

Add the curry powder, turmeric powder, cumin powder, and coriander powder. Stir well to coat the onions with the spices.

Pour in the coconut milk and diced tomatoes. Stir everything together.

Gently place the fish chunks into the pot. Season with salt.

Cover the pot and let the curry simmer for about 15-20 minutes, until the fish is cooked through and tender.
