Serves:
Ingredients
- 2 cups of basmati rice
- 1 lb of prawns, peeled and deveined
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch of ginger, grated
- 1 tsp of turmeric powder
- 1 tsp of cumin powder
- 1 tsp of coriander powder
- 1 tsp of garam masala
- 1 cup of frozen peas
- Handful of fresh cilantro, chopped
- Salt, to taste
- 3 cups of water
- 2 tbsp of oil
Instructions
-
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.
-
Heat oil in a large pan over medium heat. Add the chopped onion and cook until golden brown.
-
Add the minced garlic and grated ginger to the pan and sauté for a minute.
-
Add the prawns to the pan and cook until they turn pink and opaque. Remove the prawns from the pan and set aside.
-
In the same pan, add the soaked and drained basmati rice. Stir well to coat the rice with the onion, garlic, and ginger mixture.
-
Add the turmeric powder, cumin powder, coriander powder, and garam masala to the pan. Stir well to combine.
-
Pour in the water and season with salt. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for 15 minutes.
-
After 15 minutes, add the cooked prawns, frozen peas, and chopped cilantro to the pan. Gently stir to combine everything.
-
Cover the pan and let it cook for another 5-10 minutes, or until the rice is fully cooked and the flavors have melded together.
-
Remove from heat and let it rest for a few minutes before fluffing the rice with a fork. Serve hot.
