Ingredients
- 2 lbs mussels, cleaned and debearded
- 4 oz chorizo, sliced
- 1 can cannellini beans, drained and rinsed
- 1 bunch cavolo nero, stems removed and leaves chopped
- 2 cloves garlic, minced
- 1 shallot, finely chopped
- 1 cup white wine
- 1 tbsp olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a large pot over medium heat. Add chorizo, garlic, and shallot, and cook until chorizo is crispy and onions are soft.

Add white wine to the pot and let it simmer for a few minutes to reduce slightly.

Add cavolo nero leaves and cook until wilted.

Stir in cannellini beans and season with salt and black pepper.

Add mussels to the pot, cover, and steam for about 5 minutes or until the mussels open. Discard any unopened mussels.

Serve the mussels, chorizo, beans, and cavolo nero in bowls, garnished with fresh parsley.
