How To Make Moroccan Fish Stew

Ingredients
- 1 lb white fish fillets
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 cup sliced carrots
- 1 cup sliced bell peppers
- 1 cup sliced zucchini
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic, and cook until softened.

Stir in the ground cumin, ground coriander, ground turmeric, and cayenne pepper. Cook for another minute until fragrant.

Add the diced tomatoes (including the juice), vegetable broth, sliced carrots, sliced bell peppers, and sliced zucchini to the pot. Season with salt and pepper.

Bring the stew to a simmer and cook for 20 minutes, or until the vegetables are tender.

Cut the white fish fillets into bite-sized pieces and add them to the pot. Cook for an additional 5 minutes, or until the fish is cooked through and flakes easily.

Serve the Moroccan fish stew hot, garnished with fresh cilantro.
