How To Make Mary’s Prawn & Corn Rosti

Ingredients
- 500g prawns, peeled and deveined
- 1 cup corn kernels
- 2 large potatoes, grated
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 2 tablespoons of flour
- 1 teaspoon of paprika
- Salt and pepper to taste
- Olive oil for frying
Instructions

In a large bowl, combine the grated potatoes, chopped onion, minced garlic, flour, paprika, salt, and pepper. Mix well.

Heat some olive oil in a frying pan over medium heat. Take a spoonful of the potato mixture and flatten it in the pan to form a rosti. Repeat until all the mixture is used.

Cook the rosti for about 5 minutes on each side, or until golden and crispy. Remove from the pan and set aside.

In the same pan, add the prawns and cook for 2-3 minutes, until they turn pink. Add the corn kernels and cook for another 2 minutes, until heated through.

Serve the prawn and corn mixture on top of the rosti. Garnish with fresh herbs if desired.
