How To Make Lemony Prawn & Pea Pasta

Ingredients
- 400g linguine pasta
- 300g prawns, peeled and deveined
- 1 cup frozen peas
- 2 lemons, zested and juiced
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Cook the linguine according to package instructions. Reserve 1 cup of pasta water and drain the rest.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

Add the prawns to the skillet and cook for 2-3 minutes until pink and cooked through.

Stir in the frozen peas and cook for an additional 2 minutes until heated through.

Add the cooked linguine to the skillet and toss to combine.

Pour in the lemon juice and sprinkle the lemon zest over the pasta.

Season with salt and pepper to taste and toss once more.

If the pasta seems dry, add some of the reserved pasta water to moisten it.

Serve the pasta in bowls, garnished with freshly grated Parmesan cheese and fresh parsley.
