Ingredients
- 4 cod fillets
- 2 lemons
- Salt and pepper to taste
- 1 cup of fresh basil leaves
- 1 can of white beans, drained and rinsed
- 2 cloves of garlic
- 2 tablespoons of olive oil
Instructions

Preheat the oven to 400°F (200°C).

Season the cod fillets with salt, pepper, and the juice of 1 lemon.

Place the cod fillets on a baking sheet lined with parchment paper and bake for 12-15 minutes, or until the fish is cooked through and flakes easily with a fork.

Meanwhile, in a food processor, combine the basil leaves, white beans, garlic, juice of 1 lemon, olive oil, salt, and pepper. Blend until smooth.

Serve the lemon cod on top of the basil bean mash, and garnish with a sprinkle of fresh basil leaves.
