How To Make Lemon & Pepper Fish with Roasted Veg

Ingredients
- 4 fish fillets (such as cod or tilapia)
- 1 lemon, juiced
- 1 tsp ground black pepper
- 1 tsp salt
- 2 tbsp olive oil
- 2 cups mixed vegetables (such as carrots, bell peppers, and broccoli), diced
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1 tsp paprika
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, combine the lemon juice, black pepper, salt, and 1 tbsp olive oil. Brush the mixture evenly over the fish fillets.

Place the fish fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

Meanwhile, in a separate bowl, toss the mixed vegetables with 1 tbsp olive oil, dried thyme, garlic powder, and paprika. Spread the vegetables on a second baking sheet.

After removing the fish from the oven, increase the temperature to 425°F (220°C). Place the vegetable-filled baking sheet in the oven and roast for 10-15 minutes, or until the vegetables are tender and slightly browned.

Serve the lemon and pepper fish hot from the oven with the roasted vegetables on the side.
