Ingredients
- 1 pound of large shrimp, peeled and deveined
- 2 tablespoons of olive oil
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 4 cups of mixed salad greens
- 1 cup of cherry tomatoes, halved
- 1 avocado, sliced
- 4 hard-boiled eggs, sliced
- 1/4 cup of sliced red onion
- 1/4 cup of sliced black olives
- 1/4 cup of chopped fresh parsley
- 1/4 cup of chopped fresh dill
- 1/4 cup of thousand island dressing
Instructions

Preheat the grill to medium-high heat.

In a bowl, combine the shrimp, olive oil, minced garlic, paprika, salt, and black pepper. Toss to coat the shrimp evenly.

Place the shrimp on the preheated grill and cook for 2-3 minutes per side, or until the shrimp is pink and opaque.

Remove the shrimp from the grill and let it cool for a few minutes.

In a large serving bowl, arrange the salad greens, cherry tomatoes, avocado slices, hard-boiled egg slices, red onion slices, and black olives.

Top the salad with the grilled shrimp and sprinkle with chopped parsley and dill.
