How To Make Grilled Cod with Spinach and Tomatoes

Ingredients
- 4 cod fillets
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups fresh spinach
- 1 cup cherry tomatoes, halved
Instructions

Preheat the grill to medium-high heat.

In a small bowl, mix together the minced garlic, lemon zest, salt, and black pepper.

Rub the cod fillets with the olive oil and then season both sides with the garlic mixture.

Place the cod fillets on the preheated grill and cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.

While the cod is grilling, heat a large skillet over medium heat and add a drizzle of olive oil.

Add the spinach and tomatoes to the skillet and sauté for 2-3 minutes, or until the spinach is wilted and the tomatoes are slightly softened.

Remove the skillet from the heat and season the spinach and tomatoes with salt and pepper to taste.

Serve the grilled cod fillets on top of the sautéed spinach and tomatoes.
