How To Make Griddled Asparagus with Prawns & Rouille

Ingredients
- 1 bunch of asparagus, trimmed
- 1 pound of prawns, peeled and deveined
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- For the rouille sauce:
- 1/2 cup of mayonnaise
- 2 cloves of garlic, minced
- 1 teaspoon of lemon juice
- 1/4 teaspoon of cayenne pepper
Instructions

Preheat a griddle pan over medium-high heat.

In a bowl, toss the asparagus with 1 tablespoon of olive oil and season with salt and pepper.

Place the asparagus on the griddle pan and cook for 3-4 minutes, turning occasionally, until slightly charred and tender. Remove from heat and set aside.

In the same griddle pan, add the remaining olive oil and cook the prawns for 2-3 minutes on each side until pink and cooked through. Remove from heat and set aside.

To make the rouille sauce, mix together the mayonnaise, minced garlic, lemon juice, and cayenne pepper in a small bowl.

Serve the grilled asparagus and prawns with a dollop of rouille sauce on top.
