How To Make Foil-Poached Salmon with Dill & Avocado Mayo

Ingredients
- 4 salmon fillets
- Juice of 1 lemon
- Salt and pepper, to taste
- 4 sprigs of fresh dill
- 4 slices of lemon
- 1 ripe avocado
- 2 tablespoons mayonnaise
- 1 tablespoon chopped fresh dill
- 1 tablespoon lemon juice
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

Season the salmon fillets with lemon juice, salt, and pepper.

Place each salmon fillet on a sheet of foil.

Top each fillet with a sprig of fresh dill and a slice of lemon.

Fold the edges of the foil to create a packet, making sure it’s tightly sealed.

Place the foil packets on a baking sheet and bake for 15 minutes, or until the salmon is cooked through.

While the salmon is cooking, prepare the avocado mayo by mashing the avocado in a bowl.

Stir in the mayonnaise, chopped fresh dill, lemon juice, salt, and pepper.

Serve the foil-poached salmon with a dollop of avocado mayo on top.
