Ingredients
- 1 lb fresh white fish fillets
- 2 cups mashed potatoes
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped green onions
- 1/4 cup breadcrumbs
- 1 egg, beaten
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp vegetable oil, for frying
Instructions

In a large pot, bring water to a boil. Add the fish fillets and cook for 5 minutes or until they are cooked through. Drain and let cool.

In a mixing bowl, combine the mashed potatoes, parsley, green onions, breadcrumbs, beaten egg, salt, and pepper. Mix well.

Flake the cooked fish into small pieces and add it to the potato mixture. Stir until everything is well combined.

Shape the mixture into patties and place them on a baking sheet lined with parchment paper.

Heat the vegetable oil in a skillet over medium heat. Cook the fish cakes for about 3-4 minutes on each side, or until they are crispy and golden brown.
