How To Make Crab-stuffed Avocados

Ingredients
- 2 ripe avocados
- 8 ounces of lump crab meat
- 1/4 cup diced red bell pepper
- 1/4 cup diced celery
- 2 tablespoons chopped fresh parsley
- 2 tablespoons mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

Cut the avocados in half and remove the pits. Scoop out some of the flesh to create a larger cavity for the filling.

In a medium bowl, combine the crab meat, red bell pepper, celery, parsley, mayonnaise, lemon juice, salt, and pepper. Mix well.

Spoon the crab mixture into each avocado half, filling them generously.
