Ingredients

  • 2 ripe avocados
  • 8 ounces of lump crab meat
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced celery
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Cut the avocados in half and remove the pits. Scoop out some of the flesh to create a larger cavity for the filling.

  2. In a medium bowl, combine the crab meat, red bell pepper, celery, parsley, mayonnaise, lemon juice, salt, and pepper. Mix well.

  3. Spoon the crab mixture into each avocado half, filling them generously.

  4. Serve immediately and enjoy!
