How To Make Crab Fritters with Cheat’s Chilli & Crab Mayonnaise

- 250g crab meat
- 1/2 cup bread crumbs
- 1/4 cup mayonnaise
- 1/4 cup chopped fresh chives
- 1 jalapeno, seeded and finely chopped
- 1 garlic clove, minced
- 1 tsp Old Bay seasoning
- 1/2 tsp salt
- Vegetable oil, for frying
- For the Cheat’s Chilli & Crab Mayonnaise:
- 1/2 cup mayonnaise
- 1 tbsp sweet chilli sauce
- 1/4 cup crab meat, finely chopped
- 1 tbsp chopped fresh cilantro
- Zest of 1/2 lemon
- Juice of 1/2 lemon
- Salt and pepper, to taste

In a large mixing bowl, combine the crab meat, bread crumbs, mayonnaise, chives, jalapeno, garlic, Old Bay seasoning, and salt. Mix well until all ingredients are evenly incorporated.

Shape the mixture into small patties, about 2 inches in diameter.

Heat vegetable oil in a skillet over medium heat. Fry the crab fritters in batches for 3-4 minutes on each side until golden brown and crispy. Remove from the skillet and place on a plate lined with paper towels to drain excess oil.

For the Cheat’s Chilli & Crab Mayonnaise, mix together the mayonnaise, sweet chilli sauce, crab meat, cilantro, lemon zest, and lemon juice in a small bowl. Season with salt and pepper to taste.

Serve the crab fritters hot with the Cheat’s Chilli & Crab Mayonnaise on the side. Enjoy!
