Ingredients
- 4 cod fillets
- 1 lemon, zested and juiced
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 cups mixed summer greens
Instructions

Preheat the oven to 400°F (200°C).

Place the cod fillets on a baking sheet lined with parchment paper.

In a small bowl, mix together the lemon zest, lemon juice, parsley, olive oil, salt, and pepper.

Spoon the mixture evenly over the cod fillets, pressing it gently onto the surface.

Bake the cod in the preheated oven for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.

While the cod is baking, prepare the summer greens by washing and drying them.

Divide the greens among 4 plates and drizzle with a little olive oil and lemon juice.

Once the cod is cooked, remove it from the oven and serve it on top of the summer greens.
