How To Make Coconut Fish Curry & Rice

Ingredients
- 1 lb white fish fillets
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp curry powder
- 1 tsp turmeric powder
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- 1 cup cooked rice
- Fresh cilantro, for garnish
- Salt and pepper, to taste
Instructions

In a large pan, heat some oil over medium heat. Add the chopped onion and cook until translucent.

Add the minced garlic and grated ginger to the pan and cook for another minute.

Stir in the curry powder and turmeric powder, and cook for a minute to release their flavors.

Add the coconut milk and vegetable broth to the pan, and bring to a simmer.

Gently place the fish fillets in the simmering liquid, and cook for 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.

Season with salt and pepper to taste.

Serve the coconut fish curry over cooked rice, and garnish with fresh cilantro.
