Serves:
Ingredients
- 4 fish fillets (such as snapper or cod)
- 2 tablespoons of soy sauce
- 2 tablespoons of fresh orange juice
- 1 tablespoon of grated ginger
- 2 cloves of garlic, minced
- 1 tablespoon of sesame oil
- 1 tablespoon of vegetable oil
- 1 red bell pepper, thinly sliced
- 1 onion, thinly sliced
- 1 carrot, julienned
- 1 cup of snap peas
- Salt and pepper, to taste
- Chopped green onions, for garnish
Instructions
-
In a shallow bowl, combine the soy sauce, orange juice, grated ginger, and minced garlic. Place the fish fillets in the marinade and let them sit for 10 minutes.
-
Prepare a steamer by filling a pot with water and bringing it to a simmer. Place the fish fillets on a heatproof plate and steam them for about 12-15 minutes, or until cooked through.
-
While the fish is steaming, heat the sesame oil and vegetable oil in a large skillet or wok over medium-high heat. Add the sliced bell pepper, onion, carrot, and snap peas. Stir-fry for 5-6 minutes, or until the vegetables are crisp-tender.
-
Season the stir-fried vegetables with salt and pepper to taste.
-
Once the fish is cooked, remove it from the steamer and place it on a serving plate. Spoon some of the steaming liquid from the plate over the fish.
-
Serve the steamed fish with the stir-fried vegetables on the side. Garnish with chopped green onions.
