Ingredients
- 4 sole fillets
- 8 oz lump crab meat
- 1/4 cup bread crumbs
- 1/4 cup mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 green onions, thinly sliced
- 1 clove garlic, minced
- 1 lemon, juiced
- Salt and pepper to taste
- Olive oil for drizzling
Instructions

Preheat the oven to 400°F (200°C). Grease a baking dish with olive oil.

In a bowl, combine the crab meat, bread crumbs, mayonnaise, Parmesan cheese, green onions, minced garlic, lemon juice, salt, and pepper. Mix well.

Lay the sole fillets flat on a cutting board. Divide the crab mixture equally among the fillets, spreading it evenly over each fillet. Roll up each fillet and secure with a toothpick.

Place the stuffed sole fillets in the greased baking dish. Drizzle with olive oil and season with additional salt and pepper, if desired.

Bake in the preheated oven for 15-20 minutes, or until the fish is cooked through and flakes easily with a fork.

Serve the crab-stuffed sole fillets hot with lemon wedges on the side.
