How To Make Brandade Recipe

Ingredients

  • 1 lb salt cod
  • 1 lb potatoes, peeled and diced
  • 4 cloves of garlic, minced
  • 1/2 cup olive oil
  • 1/4 cup milk
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Soak the salt cod in cold water overnight, changing the water every few hours.

  2. Drain the salt cod, rinse under cold water, and pat dry with paper towels.

  3. In a large pot, bring water to a boil and add the salt cod. Cook for about 10 minutes until it flakes easily with a fork.

  4. Remove the salt cod from the pot and set aside to cool.

  5. In the same pot, add the diced potatoes and cook for about 10-15 minutes until tender.

  6. Drain the potatoes and return them to the pot. Mash them with a fork or potato masher.

  7. Add the minced garlic, olive oil, and milk to the mashed potatoes. Mix well.

  8. Flake the cooked salt cod into the potato mixture and stir until well combined.

  9. Season with salt and pepper to taste.

  10. Transfer the Brandade mixture to a serving dish and garnish with chopped parsley.

  11. Serve warm with crusty bread or crackers.
