How To Make Braised Chicory with Pan-Fried Home Salt Cod

Ingredients
- 4 chicory heads, halved lengthwise
- 1 lb of salt cod, soaked and deboned
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 cup chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions

In a large skillet, heat olive oil over medium heat. Add the salt cod and cook until golden brown on both sides. Remove from skillet and set aside.

In the same skillet, add the onion and garlic. Cook until softened, about 5 minutes.

Add the chicory to the skillet, cut side down. Cook until lightly browned, about 2-3 minutes.

Pour in the chicken broth and lemon juice. Season with salt and pepper. Cover and simmer for 10-15 minutes or until the chicory is tender.

Meanwhile, heat another skillet over medium heat. Add a drizzle of olive oil and return the salt cod to the skillet. Cook for 3-4 minutes on each side until crisp and cooked through.

Serve the braised chicory with the pan-fried salt cod on top. Enjoy!
