How To Make Baked Anchovy-Stuffed Red Mullet with Fennel

Ingredients
- 4 whole red mullet, gutted and scaled
- 8 anchovy fillets
- 1 fennel bulb, thinly sliced
- 2 cloves of garlic, minced
- 1 lemon, sliced
- 2 tablespoons of olive oil
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

Make a lengthwise incision on the belly side of each red mullet.

Insert 2 anchovy fillets into each incision.

In a baking dish, arrange the sliced fennel and minced garlic.

Place the stuffed red mullets on top of the fennel and garlic.

Drizzle with olive oil and season with salt and pepper.

Top each mullet with a slice of lemon.

Bake in the preheated oven for 30 minutes or until the fish is cooked through and the fennel is tender.

Serve the baked red mullet with fennel hot.
