Ingredients
- 4 small baguettes
- 1 pound boneless, skinless chicken breasts
- 2 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1 cucumber, thinly sliced
- 2 carrots, shredded
- 1 jalapeno, thinly sliced
- Fresh cilantro leaves
- Fresh mint leaves
- Pickled daikon and carrots, for garnish
- Mayonnaise, for serving
- Sriracha sauce, for serving

In a bowl, mix together soy sauce, fish sauce, honey, minced garlic, and vegetable oil. Place the chicken breasts in the marinade and let it sit for at least 15 minutes.

Preheat grill or grill pan over medium high heat. Grill the chicken breasts for about 6-8 minutes per side, or until cooked through. Remove from heat and let it rest for a few minutes before slicing thinly.

Cut the baguettes lengthwise, but not all the way through. Spread mayonnaise on one side and sriracha sauce on the other side. Layer the sliced chicken, cucumber, carrots, jalapeno, cilantro, mint leaves, and pickled daikon and carrots on the baguettes.
