Ingredients
- 4 ciabatta rolls
- 1 lb chorizo, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 4 cloves of garlic, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
- 1 cup mozzarella cheese, shredded
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 350°F (175°C).

Slice the ciabatta rolls horizontally and set aside.

In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook until crispy, about 5 minutes.

Add the sliced bell peppers, onion, and minced garlic to the skillet. Cook until the vegetables are tender, about 5-7 minutes.

Season with salt and pepper to taste.

Place the sliced ciabatta rolls on a baking sheet and toast in the preheated oven for 5 minutes.

Remove the rolls from the oven and evenly distribute the cooked chorizo and vegetable mixture onto each roll.

Top with shredded mozzarella cheese.

Return the baking sheet to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
