How To Make Tomato Cucumber Sandwiches with Feta Butter
Light, minty, and refreshing cucumber sandwiches are packed with juicy tomatoes and slathered with creamy, herbed feta butter for a tasty meal!

Ingredients
- ½small red onion
- 4ozNeufchâtel cream cheese,reduced-fat
- 4tbspbutter
- cupfeta cheese,crumbled
- 2tbspfresh mint leaves,minced
- 2tbspfresh chives,minced
- 16sliceswhite bread,or wheat, very thin
- 2plum tomatoes,very ripe
- ½medium English cucumber,seedless
- salt,to taste
- 1cupradish,or garlic, or other spicy sprouts
Instructions

Rinse onion slices beneath cold running water for 30 second. Drain, pat dry with paper towels, and set aside.

Combine the cream cheese, butter, feta, mint, and chives in a bowl; set aside.
To Assemble

Using a 2½-inch round biscuit cutter, cut bread slices into rounds. Spread cheese mixture on bread rounds. Place chopped tomatoes on 8 bread rounds.

Arrange 2 to 3 overlapping cucumber slices on remaining bread rounds. Sprinkle with salt. Top sandwiches with a small amount of sliced onion and sprouts.
